東北＆飲食ネタ

2006夏の東北旅行、青森→弘前→能代→秋田と続くのだが、デジカメにビールをかけて見事に壊してしまい、その後写真記録できず。なので、このネタをラストにしよう。

「イカのさばき方」を母親に教えてもらったので、記録エントリー。写真は実家のデジカメを使った。

←秋田市で買った「真イカ」は、2ハイで250円。安い。

さばき方

  1. まずは、実の部分と、足＋胴体＋内臓を外す。胴体と実の間に指を入れ、接合部分を探り当て外す（これは実際やってみないとわからなかった）。
  2. ゆっくり胴体を引っ張り、内臓ごと引きはがす。
  3. 胴体に残った軟骨を取り除く。
  4. 内臓部分を包丁で切り外し（イカスミ袋に注意）、目とクチバシを指で取り除く（けっこうグロテスク）。
  5. 実、胴体、足を軽く水洗いする。
  6. えんぺら（頭の三角部分）を指ではがし、そのまま実の皮に裂け目を作る。
  7. その裂け目から実の皮をむく（手に塩を付けるとぬめらない）。刺身にしないときは皮が付いていてもOK。
  8. キッチンペーパーで実の水気を取り、短冊状に切ってイカ刺しのできあがり（ナナメに隠し包丁をいれておくと歯の弱い人でも大丈夫）。
  9. えんぺら、胴体、足は、ざく切りにして1分茹でておくと、炒め物などいろいろ使える。そのまま食べてもOK。

←できあがりのイカ刺し。おいしいけど、包丁の技術が必要だね、これ。あとはよく切れる包丁買わないと（笑）。

←茹でたイカ。こちらもうまい。東京に持って帰って焼きそばの具に使ったらGOODだった。

今度「イカ三昧」パーティやってみよう。
